Experiencing Japan's best restaurants often means travelling from one end of the country to the other. Sou Higashikanda narrows that distance by inviting some of the most celebrated regional restaurants to Tokyo. From the mountain cuisine of Nagano's Yukimoto to the aged Aichi beef of Hiro Nagoya, visiting chefs take over this exclusive Tokyo counter to recreate their cuisine with ingredients brought from home. Together, the rotating roster reflects the remarkable diversity of Japan’s dining culture.
Located in a quiet neighborhood near the Kanda River, the restaurant opened in November 2024 as a members-only dining salon for local and visiting food lovers. There is little from the street to suggest what lies inside, except for a small logo by its entrance. Ring the intercom and the space opens onto a large Mortex counter with just 16 seats. The arrangement puts every guest within close view of the kitchen, making interaction with the chefs a memorable part of the meal.
Convincing acclaimed chefs to step away from their own kitchens is no small feat. It speaks to the trust Sou Higashikanda has built with its culinary partners. Past residencies have included Kyoto's Gion Yamaguchi, where Japanese seasonality meets Italian technique, Akita's Sushi Koma, celebrated for its meticulous sushi showcasing northern seafood, and Kanagawa's 1000, known for its expertly grilled yakitori.
The kitchen has been designed to accommodate the chefs’ specific needs, fitted with state-of-the-art equipment from yakitori grills to pasta machines. An extensive collection of Japanese, Western and Chinese tableware allows each chef to present dishes much as they would in their own restaurant.
CUISINE
From Across Japan to One Tokyo Counter
The week of our visit coincided with the third rotation of Hiro Nagoya, a referral-only yakiniku restaurant. Owner Hiroaki Azuma is entirely self-taught, having developed both his grilling technique and his eye for selecting meat through years of practice. His simple philosophy is to choose exceptional cuts and cook them in a way that allows their natural flavor to come through. For Sou Higashikanda, he created a special course that reflects this approach.
The omakase begins with a rare steak tartare, generously topped with Osetra caviar. Presented in a delicate glass bowl, the richness of the caviar contrasts with the sweetness of the marbled beef. Azuma likes to introduce his guests to less familiar cuts, such as umami-packed senbon-suji, or “thousand-fiber cut.” Rich in connective tissue, the cut develops remarkable depth of flavor through slow cooking while retaining a delicate, yielding texture.
Next comes kainomi, a prized section of bara from beside the fillet, followed by pointe, a rare cut found adjacent to the Chateaubriand. Rather than butterflying the pointe, Azuma cooks it whole, retaining its juices and concentrating its flavor.
The course reaches its highlight with Chateaubriand, paired with miso infused with fresh Kyoto sansho and wrapped in crisp nori. The combination of rich beef, fermented miso and the brightness of Japanese pepper lingers long after the final bite.
INGRIDIENTS
For Sou Higashikanda’s guests, Azuma brings top-grade beef from his native Aichi Prefecture, carefully aged to bring out its full character. The same principle extends to every residency, with chefs bringing the ingredients they would use in their own restaurants. To ensure the kitchen can accommodate the needs of various chefs, Sou Higashikanda is equipped with state-of-the-art facilities, including large-capacity refrigeration.

THE SPACE
Sou Higashikanda's minimalist interior sets the stage for an experience centered on the chefs and their cuisine. Dark concrete walls, blackened steel and warm timber create a theatrical backdrop that draws the eye toward the open kitchen. Industrial details are balanced by clean lines and natural materials. One side of the U-shaped counter features raised tatami seating designed for families with young children, while private dining rooms equipped with projectors and game consoles offer an intimate setting for small groups. The thoughtful design allows parents to enjoy exceptional high-end cuisine.
